Slice the Pagels in half and then in half laying down flat. Carefully slice a couple more times until the bagels are thin but still have some structure.
In a large bowl, toss all chips in olive oil and season with salt and pepper
Spread chips out on a baking sheet lined with parchment paper so all chips are on a single layer.
Bake for 13-15 minutes, checking to see when they reach desired crispness! Serve immediately with a side of hummus
