Place a medium nonstick skillet over medium heat and add 1 tsp olive oil.

Place arugula in the pan and saute for a few minutes until wilted, season with salt and pepper, set aside.

Add butter to the same pan over medium heat and carefully crack the egg into the pan. Add a tsp of water and cover with lid allowing the whites to fully set until perfectly sunny side up.

Meanwhile, toast Everything Pagel as desired.

Assemble sandwich: on the first half of toasted Pagel, spread 1 tbsp fig jam, top with sauteed arugula, then the sliced pears, then the sunny side up egg. Spread 1 tbsp cream cheese on the remaining half of Pagel and place atop egg to make the sandwich. Serve with coffee and enjoy!
