Ingredients:

1 medium sized sweet potato
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1 tsp sea salt
- ½ tsp fresh cracked pepper
- 1 Everything Pagel, sliced in half and toasted
- 1 tsbp creamy horseradish sauce
- ¼ lb roast beef, thinly sliced
- 1 slice smoked provolone
Directions:
- To make the sweet potato fries: preheat oven to 425°F. Slice potato lengthwise in small strips and place them in a large mixing bowl. Add olive oil, garlic powder, parsley, salt and pepper and mix until everything is coated. Place in a single layer on a parchment paper lined baking tray and bake for 25 minutes. Remove and transfer to a wire rack to cool slightly.
- Slice everything Pagel in half and toast. Spread horseradish evenly on two halves. Top bottom half of pagel with roast beef, then provolone. Place in broiler for a few minutes to melt cheese then top with remaining half of toasted pagel, enjoy!
