The Pagel (Paleo-Bagel)
Nearly a decade ago, our founder Steven created the original Pagel in his New York kitchen to satisfy his family’s dietary requirements.
He discovered a secret ingredient (Cassava flour) that allowed him to create a bagel that was entirely gluten-free AND paleo. Unlike other gluten-free breads on the market, it actually tasted good and didn't crumble apart, even without using any preservatives or fillers.
Needless to say, he couldn’t keep this secret contained for long! Bedrock Bakers was born, and the Pagel became a local staple, spreading nationwide soon after.
